Sassy Cow Owners Bring 'Green' Milk To Market
Milk Available At Some Madison Grocers

TOWN OF BRISTOL, Wis. -- A Town of Bristol farming family held a grand opening of its Sassy Cow Creamery Thursday, and although the business might have a funny name, the family said it has very serious goals.
VIDEO: Watch The ReportThe creamery is entirely owned by the Baerwolf brothers -- third-generation farmers who are using their own cows to produce and bottle milk."We are probably as transparent as we can possibly be," Rob Baerwolf said. "The consumer can come and see the plant; they can see the processing taking place -- the farms are right here. They can see the cattle. There's really no aspect of this entire operation that the consumer can't know about."
The Baerwolfs said it's their way to both expand their farming business -- and help consumers. More consumers today want to know where their food is coming from, and they're also more concerned about green food."It ties in nicely with people who want to live green, build green, eat green," Rob Baerwolf said. "The transportation miles on this product are so small compared to most all the other food products out there that people consume. This is probably about as green a dairy product as you could buy."From cow to carton, the process takes as little as eight hours. And while that's impressive enough, most people are more intrigued by the unique name -- Sassy Cow. So, where does it come from?"Sassy Cow brings with it a bit of an attitude of a superior product," James Baerwolf said. "Having a name that people remember easily is very important, too."Sassy Cow milk has already hit the market. Shoppers can find it in Madison at Woodman's and at Sentry Hilldale. The milk is also distributed to several grocery stores in the Milwaukee area.
